RECIPE: Scones


Serves 4-6
 
INGREDIENTS
- 2 cups sifted flour
- 1/2 tsp salt
- 4 tsp baking powder
- 2 tbsp margarine
- 3/4 cup milk

INSTRUCTIONS
1. Mix the dry ingredients together.

2. Add the wet ingredients.

3. Put dough onto a lightly floured surface and knead gently until smooth (don't knead dough too much or scones will be tough).

4. Pat dough flat and cut into 6 rounds. If you want to make a bigger batch, simply double all the ingredients in the recipe.

5. Place scones onto prepared baking tray and sprinkle tops with a little plain flour.

6. Bake at 240°C for +/- 7 minutes (until golden brown).

7. Transfer to a wire rack. Serve warm with jam and cream.

RECIPE: Stir Fry


Serves 2 
 
INGREDIENTS
For the stir-fry sauce:
- 1 1/2 tablespoons reduced-sodium soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons ginger

For the broccoli slaw stir-fry:
- 1 1/2 tablespoons sesame oil
- 1/2 red pepper, diced
- 1 zucchini, diced
- 1/2 cup mushrooms, sliced
- 1/2 cup baked or braised tofu
- 2 cloves garlic, minced
- 4 cups broccoli slaw
- Sesame seeds, to garnish

INSTRUCTIONS
1. Combine the soy sauce, rice wine vinegar, and fresh ginger in a small bowl. Mix well and refrigerate.

2. Heat sesame oil in a large skillet or wok over medium-high heat.

3. Add the red peppers and zucchini, and cook for about 3 minutes.

4. Add the mushrooms, tofu, and garlic, and cook for another 2 minutes, stirring well to make sure the garlic doesn't burn.

5. Add the broccoli slaw to the skillet, pour the soy-ginger sauce into the skillet, and stir to combine all the vegetables into the slaw. Continue stirring for about 4 minutes, or until the broccoli slaw starts to soften.

6. Serve with sesame seeds and enjoy.

RECIPE: Lasagne


Serves 4-6
 
INGREDIENTS
- 250g packet instant lasagne sheets
- ½cup freshly grated mozzarella cheese
- ½ cup freshly grated cheddar cheese
- ½ cup thickened or pouring cream
- ¼ cup freshly grated parmesan cheese

INGREDIENTS - Cheese sauce
- 60g butter or margarine
- 1/3 cup plain flour
- 2 cups milk
- 1 cup freshly grated cheddar cheese
- salt and pepper to taste

INGREDIENTS - Meat sauce
- 1 tbsp olive oil
- 1 onion, finely chopped
- 1 clove garlic, crushed
- 500g beef mince
- 2 x 425g cans tomatoes
- ¼ cup red wine
- ½ tsp ground oregano
- ½ tsp ground basil
- salt and pepper to taste

INSTRUCTIONS
1. Preheat oven to 180°C.

2. Brush a shallow ovenproof dish with melted butter or oil, line with lasagne sheets – breaking them to fill any gaps. Set aside.

3. To make cheese sauce, melt butter in a medium pan. Add flour and sit for one minute. Remove from heat. Gradually add milk, stirring until mixture is smooth. Return to heat.

4. Cook, stirring constantly, over medium heat until sauce boils and thickens. Reduce heat, simmer for three minutes. Remove from heat, add cheese, salt and pepper. Stir well until combined and set aside.

5. To make meat sauce, heat oil in a large pan. Add onion and garlic and stir over low heat until onion is tender. Add mince. Brown well – breaking up with a fork as it cooks. Stir in undrained, crushed tomatoes, wine, oregano, basil, salt and pepper. Bring to boil.

6. Reduce heat, simmer 20 minutes.

7. Spoon one-third of the meat sauce over lasagne sheets. Top with one-third of the cheese sauce. Arrange a layer of lasagne sheets on top.

8. Continue layering, finishing with lasagne sheets. Sprinkle with combined mozzarella and cheddar cheese.
9. Pour cream over the top. Sprinkle with parmesan.

10. Bake for 35-40 minutes or until bubbling and golden.

DIY: Woodcut Platter


What to do:
Step 1: If you'd like to smooth out your wood, give it a good sanding. Be sure that the wood is very clean and completely dry.

Step 2: Tape off a section of the wood slab.

Step 3: Apply paint to the desired area. Let this dry completely and remove the tape.

Step 4: After the paint is dried and somewhat hard, apply tape in another area, over the top of the area that you already painted. 

Step 5: Cover this taped-off area in the second shade of paint. And remove the tape once dry.

What you need:
1. slab of wood, large enough to serve as a small platter
2. tape
3. two different shades of paint
4. paintbrushes, if using craft paint
5. optional: sandpaper

Estimated time needed: 1 hour plus drying

DIY: Gold Moon Wall


What to do:
Step 1: Take your design printed on transparency film sheet, and place onto the overhead projector.

Step 2: Project it onto the wall to get the size and location right.

Step 3: Outline all the areas with the gold craft paint.

Step 4: Fill in all the solid spaces once the outline is complete.

What you need:
1. gold paint
2. paint brushes
3. paint remover
4. transparency film with your design
5. overhead projector

Estimated time needed: 1 hour and 30 minutes plus drying
